Episode 2: Curry Powder, Minute Rice, and Peanut Butter

DATE: February 16, 2005
LOCATION: Girls college apartment in Provo, Utah
PARTICIPANTS: Adrian, Maria, Anna and Meagan

FOOD 1: Minute Rice
FOOD 2: Curry Powder
FOOD 3: Peanut Butter

TIME STARTED: 5:30 PM

THE RECIPE:
Curry Sauce:
12 baby carrots, sliced
1 large potato, diced
2 Tbsp vegetable oil
1 cup frozen peas
1 cup frozen corn
1/2 cup water
1½ Tbsp curry powder
1 Tbsp lemon juice
½ tsp seasoning salt
¾ cup peanut butter
2/3 cup rice milk
Cubes of cooked chicken

Sautee carrots and potato in oil until cooked, but still firm. Add peas, corn, and water, and bring to a boil; simmer until vegetables are tender. Mix in the curry powder, lemon juice, and seasoning salt. Melt the peanut butter into the mixture and then add the rice milk. If desired, add the chicken at this time. Heat to boiling again, and serve over rice.

Rice:
3 ½ cups water
½ cup Welch’s Berry Sun Splash (juice)
2 Tbsp sugar
2 green leaf lettuce leaves, shredded
4 cups minute rice

Mix the water, juice, and sugar together in a saucepan; bring to a boil. Add lettuce and boil for two minutes. Then add the rice, turn off the burner, and let the rice set for five minutes.

REFLECTION:
It was funny when I first went to the apartment. The girls had not thought much about what ingredients to choose, besides curry. Anna was the only one out in the kitchen when I arrived- Adrian and Meagan were both in classes, and Maria was not feeling well. Anna frantically searched the cupboard looking for the other ingredients.
Curry is not something I have had much experience in, so this was a good challenge for me. The peanut butter took the edge off the curry flavor, and was a pleasant addition. I would have preferred to use spinach instead of lettuce and coconut milk instead of the fruit punch, but I used what was available and it turned out. Each girl had a big bowl that they ate up, so it must have been good.
